Pumpkin Pie Cookie Bites
Pumpkin Pie Cookie Bites. It’s officially pumpkin everything season, and I’m sharing one of our family’s favorite easy dessert treats! September is still pretty warm in Florida, so we don’t typically make a lot big heavy meals or desserts.

Pumpkin Pie Bites Shopping List:
Sugar Cookie Dough
Pumpkin Pie Filling
Butter or non stick oil spray
I buy the pre-made cookie cookie dough, and flatten it in my hand some, then place it in a greased muffin pan. Bake for 5 minutes less than package instructions and allow to cool.
While the cookies cool, they should create a little cup, you may need to help the cup form a little. If so, use the back of a small spoon to create a well in the cookie.
Once the cookies have cooled some, you can fill them with pumpkin pie mix. You can make your favorite pumpkin pie recipe or buy pre-made. I make my own if I have time, if not, I just get the pre-made mix and add a sprinkle of cinnamon, nutmeg, and all-spice to it. {But that is totally optional} Bake the mini cookie pies according to pumpkin pie mix baking instructions. {30-40 minutes}
