Football Watch Party with RO*TEL. I know I have mentioned that I am totally out numbered by boys in my house. And, with that, comes all.the.sports. on TV all.the.time. In an effort to make Sunday afternoon sports fest more enjoyable for me, I invite a few friends over for watch parties. The guys can be guys and the girls can half heartedly watch the games with me, and chat about things that aren’t sports…I mean, I love sports, but I *really love parties!
Life has been totally crazy for me since Hurricane Irma rolled through town a few weeks ago, and I desperately needed time with people I love in a laid back environment. So, I ran to Walmart and gathered a few supplies for an easy breezy football watch party. One of our family’s favorite meals is street taco inspired grilled chicken and homemade corn chips. I decided it would be a perfect meal for our Football Party, and Walmart had everything I needed to make it. {Yay for one stop shopping, amIright?} I also really love Cowboy Caviar, so I grabbed the ingredients for that, including a few cans of RO*TEL. As I wandered the aisles, I threw a football in my cart, and some felt to make some party decor.
Once I got home, I got to work on party decor. I used felt to make vintage style pennants, and canvas and iron on vinyl to create a banner for the backdrop. Originally, I planned to host our party in our backyard party space, but Mother Nature and the rain had other plans, so we moved the party indoors.
On the morning of the party, I threw together some Cowboy Caviar with RO*TEL, hung up the banner and flags, and set out the rest of the decor. I made a cute little framed football jersey, and printed up copies of the menu {broken into pregame, quarters, and halftime} made to look like football play sheets. I clipped them on a clipboard and propped it on the party table. I also added a football and vintage style leather helmet to the table. Drinks were dressed up as footballs, and Cowboy Caviar sat center stage waiting for the homemade football corn chips.
Our watch party was just what I needed! We all had such a great time snacking on chips and chatting through the game. Our home team even won! And YOU can win too! - 2 Cans of RO*TEL
- 2 Cans of Black Eyed Peas
- 2 Cans of Black Beans
- 2 Cans of Corn
- 1/3 Cup of Olive Oil
- 1/3 Cup Red Wine Vinegar
- 1/4 Cup of Quest Fresco
- 3 TBS of Chili Powder
- 1 tsp of Salt
- 1 tsp of Pepper
- 1 tsp of Sugar
- 1 tsp Garlic
- 1/2 TBS Butter
- Cilantro
- Corn tortillas cut into triangles or footballs (I used a cookie cutter)
- 2 Cups of Oil
- Rinse and drain beans and peas and add to large bowl.
- Drain RO*TEL and add to bowl with beans and peas.
- Drain and cook corn in a frying pan with butter and 1/2 of the chili powder, pepper, and salt. Cook over medium heat until corn pops in the pan. (about 10 minutes)
- Add to bowl.
- In a separate bowl, mix remaining salt, pepper, and chili powder with garlic, sugar, and oil and vinegar. Whisk together well and pour over beans, peas, and RO*TEL.
- Top with queso fresco and cilantro. Serve with homemade chips.
- Cut tortillas, and add to hot oil. Cook over medium heat for a few minutes until golden brown. Drain on paper.
- Sprinkle with salt while still hot.
