Earth Day is this week. When I was a kid we had a small celebration with homemade Earth Day Cupcakes and blue juice. Then, we would plant a small garden. When my own boys were younger, we also made Earth Day treats, but instead of planting a small garden, we would gather trash from the local park. And, even though my boys are adults and older teenagers, they still expect some traditions to continue. So, I have been working on Easy Earth Day Recipes, and these fun mini earth waffles are the perfect treat!

Earth Day Recipes
These mini waffles couldn’t be any easier to make! I used just four ingredients and my Dash Mini Waffle Iron (Grab one on Amazon with my affiliate link for less than $10! We use ours all the time!)
You probably have everything you need already in your pantry, but, just in case you don’t, I have an Amazon shopping list for you!
Begin by mixing the cake mix with one can of soda. Then, divide the mix into two bowls, and add a few drops of blue food coloring to one bowl, and a few drops of green to the other bowl.
Next, pour the mix into ziploc baggies and snip off a small corner.
Finally, add the mix to the waffle iron. Adding the blue for water and the green for land. I keep my waffle iron on a paper plate to help keep the mess to a minimum.
That’s it! This simple Earth Day recipe is perfect for an afternoon snack this week!
