Mango Salad Recipe

Summer is here, and the nights are warm…and I really don’t enjoy cooking inside this time of the year, and heavy food? Forget it! This easy mango salad recipe is one of my family’s go to recipes for a light and healthy fresh summer meal! This fresh meal, or side dish has ben taken to a whole new level of easy with a Mocubu Bamboo Cutting Board from Quirky!

It was so great to be able to slide the cut fruit and veggies into the drawers as I cut them! Plus, clean up is a breeze, and I feel better about using a renewable wood cutting board.
Our backyard BBQ had to be brought indoors due to rain, but we managed to get our main course grilled before the rain really came down. We enjoyed our mango salad with grilled ribs and rice next to family and friends!
- 1 Large peeled and chopped mango
- 1/2 Cup of chopped cilantro
- 1/4 Cup of minced onion
- 1 Clove of minced garlic
- 1 minced jalepeno pepper
- 2 tbsp Fresh lime juice
- 2 tbsp EVOO (extra virgin olive oil)
- Sea Salt and freshly ground pepper to taste
- Combine ingredients in a large boil, mixing well
- Cover and refrigerate overnight for flavors to mix
- Serve at room temperature
- This salad is paired well with a cold beer, a frozen drink, or fruit infused water
