
Butterbeer Recipe
Welcome to Harry Potter week on EPM! This week is all about Harry Potter, DIY’s, recipes, and we will share a fabulous party at the end of the week! Today I am sharing our family’s favorite Butterbeer Recipe. We recently visited the Wizarding World of Harry Potter at Universal and to say we were in awe would be an understatement. Of course we had to have Butterbeer! The boys loved it, and I knew we would have to find a similar recipe to make at home for them. My entire family loves Harry Potter…my oldest used to insist on being called Harry when he was little and even drew the scar on his forehead with a red pen most days, my middle two are more than halfway through the series, and my youngest is just beginning the series.


- 4 (or more) 12 oz cans or bottles of cream soda
- 1 Cup light or dark brown sugar
- 3/4 Cup heavy whipping cream (divided)
- 2 TBS water
- 6 TBS butter
- 1/2 tsp salt
- 1/2 tsp apple cider vinegar
- 1/2 tsp of rum extract*
- Bring sugar and water to a gentle boil over medium heat in a small sauce pan. Stir often. (about 4-5 min)
- Turn off the burner
- Stir in butter, salt, vinegar and 1.5 oz of the heavy whipping cream
- Set aside and allow to cool to room temp
- Add rum extract
- In a medium bowl, combine 2 TBS of the sugar syrup and the remaining cream
- Mix with an electric mixer until thick, but not whipped (about 2 minutes)
- Divide the syrup between 4 tall glasses**
- Add 1/2 the can or bottle of cream soda and stir
- Add the remaining cream soda
- Top with thick cream
- *I used homemade vanilla extract instead of rum extract. (The store bought rum extract had a lot of unnecessary extra ingredients.) Vanilla extract can be made using any type of rum or vodka. I keep vodka vanilla extract for baking, but rum and bourbon vanilla extract for marshmallow making and, now, Butterbeer
- **We only added a few tablespoons of the syrup to the cream soda. We have made 6 glasses of butterbeer and still have 1/2 of the syrup and whipped topping left.
That little bottle is the vanilla extract. I just upcycled a syrup bottle from Cracker Barrel.
