Spring Picnic. My husband recently lost his father, and while it was expected, it’s not any easier to navigate through suddenly being without a parent. Our days have been filled with estate attorneys, banking appointments, funeral arrangements, and helping his mom get through the painful first few weeks without her beloved spouse of nearly fifty years. Because of this, my husband and I have kind of neglected each other…taking care of everyone else, and not ourselves. So, with the weather being spring like, I scheduled an “appointment” with him in our yard.
While my hubby was with his mom, I gathered everything we would need for a simple picnic. A quick trip to Walmart, and some shopping around the house, and I was ready to go! It is so important to take time for yourself and try to eat well, every day, but especially when you are going through a tough loss.
I ran to the closest store, Walmart, and gathered the foods and other picnic supplies. At Walmart, I grabbed some plastic ware, napkins, disposable cups, and food for the picnic. One of my favorite meals is salad, my hubby loves a sandwich, so I improvised and made a Club Salad Sandwich. Pepperidge Farm Farmhouse™ White Bread, Hillshire Farm® Thin Sliced Honey Ham, and Hellmann’s® Real Mayonnaise, with fresh sliced tomatoes, hard boiled egg slices, and leafy green Romaine Lettuce. It was an amazing compromise! Pepperidge Farm® bread so great and hearty, it was easily able to hold up to all of the food I piled on it. I have been a fan of their bread since I was a little girl, and they haven’t changed a bit! I also love using Hillshire Farm® lunch meats for a delicious and quick lunch, it is slow roasted for hours, making it taste so much better other lunchmeat. Hellmann’s® Real Mayonnaise was lightly spread on the bread for a little tangy flavor, and moisture. (My close Walmart has food on one side of the store and party goods on the other, so I grabbed the paper products, and then ran to the cold case for the lunch meat, and the condiment/bread aisle for the bread and mayonnaise. Then, I quickly grabbed a bowl of fruit salad and a jug of lemonade and I was on my way to self checkout! I think it was less than 20 min for the whole trip!)
[yumprint-recipe id=’85’]I rounded out our meal with fruit salad in individual cups, a small jug of lemonade, and some cookies that a dear friend sent us.
I wrapped the sandwiches in freezer paper and tied it with baker’s twine to make it a little more special…plus, the sandwiches were just too big for a regular sandwich baggie! I portioned fruit salad into 8oz cups and added a custom label to them. I also added a coordinating label to the lemonade jug. Simple party cups and plastic ware were color coordinated as well. Finally, I loaded it all into a borrowed classic picnic basket with a soft blue blanket.
My hubby was so pleasantly surprised to come home to our “meeting” and see that I had fooled him, and there was no meeting, and there was a delicious meal and time for us planned instead.
