Holiday Banana Bread Recipe

Holiday Banana Bread

 

This banana bread offers a nice change from traditional fruit bread and will add a festive flair to your table during the holidays. Serve as a dessert or bake in mini loaf pans and hand them out as tasty gifts. The cinnamon, chocolate chips, peanut butter chips and cherries make this unique take on banana bread super moist and flavorful.

 

Ingredients:

½ cup of butter or margarine

1 cup white sugar

2 eggs

2 cups flour

1-teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

1 ¼ cups (about 3 large) smashed very-ripe bananas (the more ripe the better the taste)

½ cup peanut butter chips

½ cup semi-sweet chocolate chips

¼ cup chopped maraschino cherries

Recipe 1

Directions:

Preheat oven to 350 degrees. In a large mixing bowl cream butter and sugar. Add eggs, one at a time, beating well after each addition. In medium mixing bowl combine flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the creamed mixture. Beat in bananas until just combined. Gently stir in the peanut butter chips, chocolate chips, and cherries.

 

Grease a 9x5x3 inch loaf pan with butter. Pour batter into the loaf pan and bake for 70-80 minutes or until tooth pick inserted in the middle comes out clean. Cool on a rack for 10 minutes before removing from pan to avoid tearing.
