And, since I am all about Fall everything right now, I thought I should definitely go to the store and buy 15 lbs of apples. But,, what I didn’t think about was the fact that my family doesn’t eat that many apples. So, I needed to come up with a yummy recipe that uses a lot of apples and they would all eat. I’m happy to tell you my boys powered through two batches of these delicious caramel apple pie cookies in record time.

Apple Recipes
Every Fall I grossly overestimate how many apples my family will realistically eat and enjoy. And, every Fall I make all the apple recipes to use up the excess apples I have in the fruit baskets.
One year I had about 20 apples in the fruit basket, which is totally ridiculous…so I made the most amazing Homemade Spiced Apple Cider.

Delicious Caramel Apple Pie Cookies
Let’s make these AH-MAZING caramel apple pie cookies!
You will only need a few ingredients and about 15 minutes to make these incredible dessert cookies. And, the topping can be used to make apple crisp, apple pies, and more!
Bake the apples according to recipe instructions. (shh…I used break and bake cookies) Then, top with the caramel apple pie topping. You can use this topping in pies, apple crisp, or as a dip too!

- Lemonade – I like Simply Lemonade
- Vanilla Extract
- Flour
- Salt
- Ginger
- Cinnamon
- Nutmeg
- Bourbon Smoked Sugar
- Bourbon

Caramel Apple Pie Cookies
Ingredients
- 5 Apples Peeled and diced – I used Red Delicious and Granny Smith Apples
- 3/4 C Brown Sugar
- 1/3 C Lemonade
- 1/4 C Water
- 3 TBS Flour
- 8 tsp Bourbon
- 1 1/4 tsp Cinnamon
- 1 tsp Nutmeg
- 1 tsp Bourbon Smoked Sugar
- 1 tsp Vanilla Extract
- 1/2 tsp Ginger
Instructions

Peel and dice apples.

Use the zester to grate fresh nutmeg and cinnamon.

Place all ingredients into a sauce pan.

Cook over medium heat, stirring often until sauce becomes thick.

Reduce heat to low, stirring often until apples are soft.
