I love a crisp fresh peach. I can eat three or four a day during peach season. But, once they get a little soft, I won’t eat them, so I have loads of peach recipes to use those soft peaches.

Make Cookie Peach Cobbler
We make cobblers a lot. Usually when the fruit is too soft for us to want to eat fresh. My kids love our version of apple cobbler, we slice apples into bite size chunks and then cover it with the crumb topping and bake it for about 45 minutes. But, I wanted to make more of a cobbler bar with our peaches!

Cookie Peach Cobbler
Ingredients
- 2 Rolls Sugar Cookie Dough
- 3 Peaches Thinly Sliced
- 1 C Flour
- 1/2 Cup Brown Sugar Packed
- 1 Stick Butter Melted
- 2 TBS Bourbon Vanilla Extract can be used
- Ground Nutmeg to taste Grind with the zester
Instructions

Fill the bottom of a baking pan with rolled cookie dough and bake according to package directions.

While the cookie bakes, wash and slice the peaches. Set aside.

Once the cookie is baked, allow to cool in the pan, and prepare the crumb topping.

Cover cooled cookie with sliced peaches and crumb topping, and bake for 20 min at 350*

Remove from the oven, and allow to cool for 15 minutes before serving.
Crumb Topping

Mix butter, flour, sugar, bourbon, and nutmeg together in a bowl. If it isn't firm, add a little more flour.
