Pear Fizz Cocktail

Pear Fizz Cocktail.  I cannot even begin to grasp that tomorrow is the last day of 2016.  When I was a kid the year 2000 seemed like an eternity away, and here I am trying to understand how we are even finished with the first 16 years of this millennium.  I hosted a few friends tonight for an early NYE celebration, but I wanted to create a signature drink for the evening.

I started by making a simple pear syrup.  (Equal parts water and sugar with one pealed and cut pear)  Once the syrup was finished boiling and cooled, I mixed it up in the blender to incorporate the pear.  I used a cup of sugar and a cup of water to make my syrup.  I added a 1/4 cup of Vodka to the syrup and placed it in the fridge for a few days. 

I grabbed a few bottles of sparkling wine for the party, and poured the pear syrup and vodka into an adorable hobnail glass pitcher.

Add a few ounces of the syrup to a glass, and top with champagne or sparkling wine.  My guests added fresh pear garnish and even some rosemary sprigs from our cupcakes to their glasses.  It was a delicious treat, perfect for any celebration!
