
Gingerbread Marshmallows
Gingerbread Marshmallows. I love to share homemade gifts with friends and family during the holiday season. One of the gifts everyone always asks for again and again is homemade marshmallows. I try to make new flavors each year, and while I was visiting Pineapple Paper Co. in November, we made several different flavors, and brainstormed flavors for each month.Gingerbread marshmallows are the perfect homemade treat for the holiday. They cost just a few dollars for a ton of them, and if you package them in a cute cocoa mug, you have an awesome, and inexpensive gift!


- 1/2 Cup Molasses
- 1/2 Cup Dark Corn Syrup
- 1/2 Cup Brown Sugar
- 1 Cup Sugar
- 1 Cup Cold Water Divided
- 3 Packages of Gelatin
- 2 tsp Vanilla Extract
- 1 tsp Cinnamon
- 1 tsp Ginger
- 1/4 tsp Nutmeg
- 1/4 tsp Cloves
- Pinch of Salt
- Add corn syrup, molasses, sugars, and 1/2 cup of water to pot.
- Cook over medium heat covered for 3 minutes.
- Remove cover and cook until mixture reaches 240*
- While the sugars are cooking, add gelatin to water.
- Pour gelatin and water mix into mixer with the sugar mix. Add spices and extract.
- Mix for 10-12 minutes
- Pour into greased and sugar dusted pan
- Refrigerate for several hours until the fluff has set
- Remove from fridge and pan and cut with pizza cutter.
- Store in air tight container for up to 3 weeks.
