We like to celebrate Cinco de Mayo at home. Even though we aren’t Hispanic, I have always taken the opportunity to tach my boys about different cultures and their celebrations when I am able to. The boys are older now and they aren’t around to celebrate with us as much. But one way I can ensure they will be home for dinner is when I make our semi-famous fiesta lime chicken recipe.

Cinco de Mayo Celebrations
Over the years we have celebrated with so many Cinco de Mayo parties and dinners. We love Mexican and Tex-Mex food, so any time we can have our favorites on the menu is a good day!
These are some of my favorite Cinco celebrations, but there are so many to choose from.
Make a Cinco de Mayo Meal
Fiesta lime chicken with a twist on traditional street corn, a side of cilantro lime rice, and fresh avocado is a family favorite. And, it is the perfect meal for Cinco de Mayo, or any time of year!
Fiesta Lime Chicken Recipe
This recipe is really simple, but it is full of flavor. We grill it on our Weber Charcoal Grill and the hard wood fire and smoke adds another layer of flavor to this already delicious chicken.
Supplies and Ingredients
- Chicken
- Chili Powder
- Cumin
- Crushed Red Pepper
- Lime
- Salt
- Shredded Cheese
- Ranch Dressing
- Cholula Hot Sauce
- Weber Grill
- Grill Accessories
- Raw and Cooked Food Trays
Fiesta Lime Chicken
Ingredients
- 3-4 Chicken Breasts
- 4 tbsp Cumin
- 4 tbsp Chili Powder
- 4 tbsp Crushed Red Pepper
- Pinch Salt
- 8 TBS Spicy Ranch Dressing 4 parts ranch dressing + 1 part Cholula sauce
- 1 C Shredded Cheese
- 1 Lime
Instructions

Sprinkle each chicken breast with 1 tbsp chili powder, cumin, red pepper flakes, and a pinch of salt.

Grill around the fire for 7-10 min each side depending on the thickness of each breast.

Just before the chicken is fully cooked, squeeze 1/4 of a lime on each breast.

After the chicken is fully cooked, squeeze a little spicy ranch on to one side of the chicken and top with shredded cheese. Allow the cheese to melt before removing the chicken from the grill.

Optional – top with fresh diced tomatoes
