Eggo Panini Recipe. Y’all, my boys love their Eggo Buttermilk Waffles, actually there aren’t really any varieties they don’t like. And, as a busy good mom, I am preparing them for eventually leaving the nest by encouraging them to create and cook a full meal for all of us. My youngest one is turning 10 in just a few short days, and I have tasked his second oldest brother with making the birthday meal. I think he did a great job developing the recipe! I asked my son to search for recipes he thought everyone would enjoy, and then adapt it to make it special for his brother. He knows his brother loves Eggo Buttermilk Waffles, turkey, and “round cheese”. Armed with that knowledge, we ran to our local Walmart to gather ingredients. My son, the savvy shopper that he is, found the ibotta app and a coupon while we were shopping. We gathered Eggo Buttermilk Waffles, and they now have colors and flavors from natural sources {yay!}, provolone cheese, sliced turkey, pesto, and fresh lettuce and a tomato. I noticed all the Eggo varieties are free of artificial flavors with colors from natural sources. Making them just like homemade, but with less work!
Bless my son’s heart, he wanted to buy a panini press to make his brother’s birthday meal…I decided to show him so mom ingenuity, and we used our grill skillet and pressed the sandwich with another skillet and a canister of sugar in it for weight. We decided to make a test run of the sandwich while the youngest was out shopping with his grandma. It was AMAZZZZZING!


- Eggo Buttermilk Waffles
- Deli Sliced Turkey
- Deli Sliced Provolone
- Sliced Tomato
- Lettuce
- Pesto to taste
- Butter
- Butter one side of a frozen Eggo Buttermilk Waffle
- Spread a thin layer of pesto
- Add a slice of provolone
- Add 2 slices of Turkey
- Add lettuce and tomato (if desired)
- Add second slice of provolone
- Top with a second buttered Eggo Buttermilk Waffle (Butter will be on the outsides of the sandwich)
- Place in skillet, top with heavy skillet and add pressure
- Grill each side for 2-3 minutes
