Lucky Charms Mini Cheesecakes
This St. Patrick’s Day, make no-bake mini cheesecakes that have a {charming} twist–they are made with Lucky Charms cereal!
Recipe Makes 8 Lucky Charms Mini Cheesecakes, depending on glass size.
Ingredients:
3/4 cup finely crushed Lucky Charms Cereal Pieces
2 tablespoons butter, melted
1 cup heavy cream
8 oz. cream cheese, softened
1/3 cup sugar
1/8 teaspoon salt
1 teaspoon vanilla
Green Food Coloring
Lucky Charms Marshmallows

Directions:
Separate the cereal pieces from the marshmallows of about 1/2 box of Lucky Charms (this is great task for your little ones!) Crush the cereal pieces using a food processor until you have 3/4 of a cup of cereal. Combine crushed cereal and butter in small bowl and mix until it holds its shape when pressed (you can add a little more melted butter as needed to reach desired texture). Spoon about a tablespoon of cereal in the bottom of each glass. Using your fingers or the end of a wooden spoon, press crust down evenly.
In a standing mixer fitted with the whisk attachment, beat heavy cream until medium peaks form. Set aside.
In another mixing bowl, beat cream cheese, sugar, salt, and vanilla until smooth. Add cream cheese mixture to heavy cream and beat until incorporated. Add a few drops of green coloring and mix well until you reach the color desired.
Divide batter evenly between the cups using a pastry bag.
Refrigerate for at least 3 hours to set or overnight.
Top with Lucky Charms marshmallows! May the luck o’ the Irish be with you today!
