Game Day Snack Recipes.  So, I am not a huge fan of football, I am, however, a fan of football food…some weekends, when the hubs invites his friends over, I will invite my girlfriends over too.  One of our favorite game day snacks are chips and dip.  Not, regular chips and dip, though, but homemade corn tortilla chips and salsa con queso.  But, I never want to spend all day preparing for a party or guests…I want food to be quick and easy, but delicious too!

The hubs mentioned that he wanted a few friends over for our local team’s home opener game, of course I obliged, and invited a few of my own friends over as well.  So, I went ran to the nearest Walmart and gathered a few things to help make our “party” a success. I bought Pace® Chunky Salsa, a brick of cream cheese, American cheese from the deli (in a block, not slices), and some corn tortilla shells.  I was in and out in no time!  Pace® is my family’s favorite salsa.  I love it because the products are full of genuine Southwest flavors.  Since Pace® is made with handpicked jalapeños, it’s pretty much guaranteed to add a little kick to whatever you’re eating.  It’s literally “good on anything but ice cream!”

About an hour before our guests arrived, I chopped up 1/2 a pound of the American cheese into cubes, and added it to a small crock pot with a brick of cream cheese.  Then, I added 1/3 of a cup of Pace® Chunky Salsa to the crock pot and let the crock pot do it’s work.  While the cheeses melted into the salsa, I cut up the corn tortilla shells into 8ths, and warmed up 12 oz of corn oil in a small sauce pan.  You could totally do this in a deep fryer too, but sauce pans are easier to clean in my opinion.  Cook tortilla shell triangles over medium heat for 2 minutes or until crispy.  (My stovetop was on 6, and it took 2 minutes for the chips to cook) Allow the chips to cool on a plate lined with a paper towel to soak up the excess oil.   You can sprinkle some salt on the chips while they are still hot too and enjoy with delicious Pace® Chunky Salsa.  That’s it!  So simple, and so delicious!
