Back to School Breakfast Bar. I am not going to lie, back to school this year is a tad bittersweet. I was so ready for the normalcy and routine of school, but I only have two years left of elementary school, and high school for my big kid…and, well, that kinda breaks my heart a little. I cannot even understand how they grew up so fast on me. Like the saying goes, the days are LONG, but the years are SHORT. Anyway, I wanted to try to make the start of this year a little more special than usual, so I set up a simple Back to School Breakfast Bar.
I have four(!) boys and each one likes something completely different than another, they also all get up and head off to school at different times. The great thing about this breakfast bar is that I can leave everything but the main course, Eggos, on the table until the next child is ready for breakfast. WINNING! I did have to make some chicken nuggets for one of my boys, as he firmly believes that waffles should only be served with fried chicken. But, I keep frozen nuggets in the house all the time, and I just popped a few in the oven while we did some of the fun activity sheets from Crayola! These were a great way to get my guys’ brains working in the morning and stimulate a little morning conversation that goes beyond a grunt and a nod. Plus, we are fueling their minds and bodies for back to school! Also, Chicken + waffles = oh.my.yum! for breakfast, lunch, dinner, or snack! Literally, fried chicken, Eggo waffles, a tiny bit of syrup, voila!
I set up the table after the boys went to bed the night before school. It was simple, but cute. The backdrop was a stretched fabric frame with a fun stacked book stand up. I made felt cut out buses and apples banners for the front of the table. I used a crisp white tablecloth on the table, but I covered it with yellow wrapping paper. On the wrapping paper, I used Crayola markers to write the food and juice choices. I stacked cake plates and added Eggo buttermilk waffles, blueberry waffles, French toast, and pancakes on each one. Glass jars were filled with fresh fruit, and homemade blueberry syrup, blueberry butter (simple recipe below), and butterscotch syrup (from my Butterbeer recipe). The blueberry butter is absolutely delicious on Eggo pancakes and waffles! The boys were asked to choose juice or milk, served from glass bottles in a tray of ice. They rounded out their meal with yogurt. I also added brand new Crayola crayons, markers, and colored pencils to glass jars on the table. I love new crayons and markers.
I think this was the most fun and most simple way to have a first day of school breakfast! In fact, the boys have asked if we can do it like this once a month! Of course I said yes, because Eggos are a quick, easy meal solution and are something we can stock up on during a busy school year!
