
Vanilla Pumpkin Bundt Cake Recipe
I recently met Heather Anne Naples at Blog Fete, she and I had an instant camaraderie because we were just two of three ladies wearing jeans and comfy shoes. If you know me, you know this is my “uniform”. As a mom of 4 busy boys, and a DIY’er at heart, I cannot justify the expense on super nice clothes that I won’t be comfortable in. Shortly after Blog Fete, Heather Anne emailed me with a fabulous idea for the Winter Issue of EPM. Her beautiful “So Very Thankful” Thanksgiving table can be seen in the current issue, as well as her delicious vanilla pumpkin bundt cake recipe! Luckily for us, she is sharing the recipe!


- 2 3/4 cups sugar
- 5 eggs
- 1 1/4 cup oil
- 2 1/2 cups flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp salt
- 2 tsp. vanilla
- 1 15oz. can pumpkin puree
- 1/2 cup pure maple syrup
- 1 TBS heavy whipping cream
- 3 TBS butter
- 1 cup powdered sugar
- Preheat oven to 350
- Beat eggs and sugar until light and creamy.
- Add oil and mix well.
- Add flour, baking soda, cinnamon and salt. Mix until combined.
- Stir in pumpkin and vanilla.
- Pour into well greased 12 cup bundt pan.
- Bake 50 minutes or until toothpick inserted comes out clean and top is
- springy.
- Maple Glaze
- Bring maple syrup and butter to a boil.
- Stir in heavy whipping cream.
- Remove from heat.
- Stir in powdered sugar.
- Use immediately.
- I used store bought caramel sauce and drizzled this over the top of the
- glazed cake.
