Vanilla Macarons with Cow Tales Caramel Filling. Many years ago, when I was just a little kid, I fell in love with true French macarons. My best friend and her family would visit her mother’s family in Belgium and they always brought me back goodies…Macarons and chocolates were my favorites. As time went on, I forgot about the macarons, but their recent popularity refreshed my memory. However, I wasn’t able to find one I loved as much as the ones I had as a child, until I had some made by another friend and her daughter.Earlier this week I asked for some help making my own macarons, and my friend’s daughter came over and helped me make a ton of perfect, amazing, delicious macarons, and they were all gone in just a few hours! The feet were perfect, the cookie had a slight sheen, was a little chewy, but still airy…and the filling was to.die.for!We used the recipe for Vanilla Macarons from this book. But, I made a simple Cow Tales Caramel Buttercream filling for them. Each one had a creamy hint of caramel, mixed with the delicious vanilla macaron cookie. They were seriously some of the best macarons I have ever tasted, and I cannot wait to make more! We followed the cookie recipe exactly, and made sure the house wasn’t too humid when we mixed the batter. But, we threw out the recipe for the filling and made our own. We used Wilton 2A icing tips for the macarons and the filling.
