Cookie Ice Cream Sandwich…so, the Fourth of July is all about the food for me, the desserts especially. And I want the food and desserts to be easy to make so I can enjoy my time with my family.

Cookie Ice Cream Sandwich Shopping List
Chocolate Chip Cookies – 2 for each sandwich
Ice cream – 2-3 scoop for each sandwich
*Optional Sprinkles
Allow the ice cream to soften and place two to three scoops of ice cream on the bottom of a cookie, and top with the second cookie (so both cookie bottoms touch ice cream) make as many as you will need, and place on a baking sheet in the freezer for several hours.
Once the cookie sandwich is frozen, melt the candy melts according to package instructions, in a small ziplock bag. Drizzle colored candy melts over the cookie ice cream sandwiches. Pop the baking sheet and freeze until just before you’re ready to serve them.
Make more than you think you will need, these are a BIG hit with our friends and family, and I always wish I made more.
