Slice peppers in half and remove seeds.
Slice onions in half.
Slice tomatillos in quarters.
Place peppers, onions, and tomatillos onto a baking tray and coat with olive oil.
Bake in the oven at 350* for 10-15 minutes.
Remove from oven and allow to cool.
Place roasted peppers, onions, and tomatillo, and minced garlic and lime juice into a blender and pulse blend for about 45 seconds.
Serve on tacos or with fresh chips!
